"A balanced diet is a cookie in each hand"

I’m not sure where I heard that quote..but I believe it to be true! My mother made these cookies all the time when we were growing up, and to this day they are my favorite. Insanely fattening..insanely delicious. Best made on a rainy day and enjoyed with a huge glass of milk! At least, that’s what we’re doing.

Reese’s Peanut Butter Chocolate Chip Cookies

1 1/4 cup butter
2 cups sugar
2 tsp vanilla
2 eggs
1 tsp baking soda
1/2 tsp salt
3/4 cup cocoa
2 cups all purpose flour
1 pkg. Reese’s Peanut Butter chips

Cream butter and sugar until pale and fluffy. Add vanilla and eggs. Combine dry ingredients in a separate bowl and stir. Slowly add to your wet ingredients and mix. Add your bag of chips and stir. Try not to eat too much batter…drroooool. Scoop onto your cookie sheet directly or onto parchment paper by the teaspoon. Should make about 4 dozen cookies. Bake at 350F for 8-9 minutes
I am very sad that I don’t have a picture to show you from our cookie making this morning. Our camera battery died just as I was about to take an awesome shot of Lucy’s face covered in batter! My sweet girl! I’ll let you imagine it. Here instead is a picture of Lucy on her new big girl stool which we will be doctoring up to look like a learning tower sometime very soon. Our good friends were very kind to bring it to us all the way from Ottawa.
In other news, we found out that Ben’s residency application has been ‘approved on principle’ and we are just waiting for them to send the last bit of paperwork to the immigration office in Halifax for Ben to fill out. Please continue to pray for us as we await Ben’s residency, this seems to be the ongoing battle since we’ve been married and we will be so grateful and pleased when it is all sorted out. God has taught us so much about waiting on His timing and providence and we are grateful. God willing that everything comes together in time, Ben will be spending Christmas in New Zealand and going to his sisters wedding a few days beforehand. It’s been almost four years since he has been home and this trip will be well deserved!

  1. Katie, we are so pleased to hear that Ben's residency is finally getting sorted out! We will continue to pray that this last stage goes quickly and smoothly for you 🙂 it's amazing what a mental toll this situation takes on people, I remember well our profound relief after Andrew's was finally through, and am so pleased that you guys will experience that joy so very soon!
